Recipe: Zungú (manioc porridge) a la Quilombola
Cook: Lucinha – Marilúcia da Conceição Luzia
Ingredients:
- 1 can of tomato sauce
- Cilantro (to taste)
- 600g of squid
- 1.5 kg of mussels
- 500g of shrimp
- 1kg of fillet of fish (hake)
- salt
- Black Pepper (to taste)
- Ginger
Preparation:
Wash the mussels, clean the shrimp, cut the fish and squid, seasoning it with salt and chopped cilantro (including the stalk). Boil the mussels and take the rind. Cook everything: mussels, squid, shrimp and fish (be careful to keep the firm fish consistency, do not pass the point). Put the tomato sauce. Add the seafood broth, chopped coriander and pepper to taste. Serve with manioc porridge.
