The Cuisine of Quilombos: tastes, territories and memories traveled through landscapes from the Metropolitan Region to the Fluminense Center, sinuous mountains from the Serrana Region to the Paraíba Valley, lush beaches of the Coastal Plains to the Region of the Costa Verde, meadows of the North Fluminense to the crystalline surfaces of the Northwest Rio de Janeiro state. These routes were guided by the flavors, textures and odors coming from the culinary practices of twenty-nine quilombola communities in the State of Rio de Janeiro.
