Free-range Hen with Cassava
Ingredients:
- 1 free-range hen
- 500g of cassava
- 4 cloves of garlic
- 4 leaves of basil
- 1 generous pinch of salt
- 1 teaspoon of paprika
- 1 medium onion, chopped
- ½ cup of vinegar
- 2 lemons
- parsley and green onion
Preparation:
Cut the chicken, rinse with hot water, vinegar and lemon. In a saucepan, sauté the garlic with basil, salt and chopped onion. Place the chicken and let it brown. Once golden, drip the water slowly until cooked. When the chicken is cooked, add the cooked cassava and also the parsley and green onion over the top "coloring." Serve with rice and beans. Serves 6.
