Recipe: GREEN AMARANTH WITH SOUR EGG

Cook: Alcinea de Souza Silva, Dejeni de Barros Martins e Glauce dos Santos Araújo

Ingredients:

  • leaves of green amaranth
  • 3 cloves of garlic
  • oil
  • egg
  • salt to taste

Preparation:

Knead the garlic in the pan with the salt. Add the oil and bring to heat to brown the garlic. Place the leaves of green amaranth and stir-fry. At the end of fried the eggs put the salt and turn off the heat. Leave the yolk hard. Serve with cold manioc porridge. * Can be done with vine spinach instead of green amaranth.
