Free-range Hen with Okra


  • 1 free-range hen
  • 5 basil leaves
  • 2 medium onions
  • 5 cloves of garlic
  • 1 medium bell pepper
  • 2 tomatoes
  • parsley
  • green onion
  • 1 pinch of salt
  • 3 lemons


After kill the chicken, wash it with lemon. Season with garlic, salt, lemon and basil the sliced chicken. Cut (small pieces) the tomato, onion, bell pepper, parsley and the green onion. In a large pot put a the garlic, not too much, onion, basil, the chicken and let it brown over medium heat, slowly dripping water until cooked. When cooked, add tomatoes, peppers, parsley, green onion and muffle for 5 minutes. In another pan, put the okra to cook with a pinch of salt and when its tender, serve with chicken, rice and beans. Serves 6.
