Fish with Banana and Gravy


  • Fish – Horse-eye jack
  • cilantro
  • annatto
  • 4 rangpur
  • 2 medium onions
  • 3 large tomatoes
  • chilli
  • 1 bunch of parsley
  • plantain (not ripe)
  • cassava flour


Cook the peeled green banana and split in half. Clean and cut the whole fish in steaks (about 4cm and whittle the slices). Season with salt and squeezed lemon (do not reserve). Browning the garlic and half an onion, put all the fish first, on top, put the onion tomato and banana, in this order. Add a bit of the water that boiled the banana. Also join annatto* to
the broth. At the end of cooking, add green onions, parsley and chopped cilantro. Mush: take the fish sauce and banana with the pan still on fire and put on the desired portion of fine cassava flour and stir until to the point of mush.
* Tip: "When peeling green banana, use a glove because turns the hand darker." To take the dye put annatto seeds in warm water.
